Ingredients

  • 2 large zucchinis
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup black olives sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish

Instructions

  • Preheat your oven to 450°F (230°C).
  • Lightly flour a surface and roll out the pizza dough to your desired thickness. Transfer it to a baking sheet or pizza stone.
  • Brush the dough lightly with 1 tablespoon of olive oil to prevent it from becoming soggy.
  • Pre-bake the crust:
  • Bake the pizza crust for 8–10 minutes or until lightly golden.
  • Add the toppings:
  • Spread marinara or pizza sauce evenly over the pre-baked crust.
  • Sprinkle mozzarella cheese over the sauce.
  • Arrange zucchini slices in a single layer on top of the cheese.
  • Sprinkle Parmesan cheese, Italian seasoning, garlic powder, and crushed red pepper flakes (if using) over the zucchini.
  • Bake the pizza:
  • Return the pizza to the oven and bake for another 10–12 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
  • Garnish and serve:
  • Remove the pizza from the oven and drizzle with the remaining olive oil. Garnish with fresh basil leaves.
  • Slice into pieces and serve warm.
