Preheat the oven to 325°F (165°C).
Grate the zucchini and gently squeeze out excess moisture.
In a large bowl, whisk together the oil, honey, eggs, milk, and vanilla.
Add the flour, baking soda, cinnamon, salt, and nutmeg. Mix until just combined.
Fold in the zucchini and nuts (if using).
Pour the batter into a greased loaf pan.
Bake for 55-60 minutes, or until a toothpick comes out clean.
Cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
