Ingredients
  

  • 4 Egg
  • 4 slices Bacon Cooked (chopped)
  • Salt & Black Pepper to taste
  • 1 tsp Extra Virgin Olive Oil
  • 6 cups Baby Spinach
  • 3 ozs Cheddar Cheese shredded

Instructions
 

  • In a small bowl, whisk the eggs and add the bacon.
  • Season with salt and pepper.
  • Heat a skillet over medium heat and drizzle the oil.
  • Once hot, add the spinach and cook until just wilted, about one minute. 3
  • Pour in the egg mixture, add the cheese, and cook, stirring occasionally, until the eggs are cooked to your liking.
  • Remove from heat and enjoy!.
