Smoked Salmon and Poached Eggs On A Toast

Ingredients
  

  • 2 oz avocado smashed
  • 2 slices of bread toasted
  • 1/4 tsp freshly squeezed lemon juice
  • 2 eggs poached
  • 3.5 oz smoked salmon
  • 1 tbsp. thinly sliced scallions
  • Pinch of kosher salt & cracked black pepper

Instructions
 

  • Take a small bowl and then smash the avocado into it.
  • Add the lemon juice plus a pinch of salt into the mixture, mix it well and set aside.
  • Poach the eggs and toast the bread for some time.
  • Once the bread is toasted, spread the avocado on both slices and add the smoked salmon to each slice.
  • Carefully transfer the poached eggs to the respective toasts. A
  • Add some cracked pepper, and garnish with scallions before serving.
