avocado smashed

of bread toasted

freshly squeezed lemon juice

smoked salmon

thinly sliced scallions
Pinch
of kosher salt & cracked black pepper
Instructions
Take a small bowl and then smash the avocado into it.
Add the lemon juice plus a pinch of salt into the mixture, mix it well and set aside.
Poach the eggs and toast the bread for some time.
Once the bread is toasted, spread the avocado on both slices and add the smoked salmon to each slice.
Carefully transfer the poached eggs to the respective toasts. A
Add some cracked pepper, and garnish with scallions before serving.
