Mediterranean Diet Avocado Toast

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1/4 cup fresh berries blueberries and strawberries recommended
  • 1 slice of whole-grain bread
  • 1/2 ripe avocado sliced
  • 1 teaspoon extra virgin olive oil
  • Pinch of sea salt
  • Optional: a sprinkle of black pepper or chili flakes

Instructions
 

  • In a bowl, add the Greek yogurt.
  • Drizzle the honey over the yogurt.
  • Sprinkle the chopped walnuts on top.
  • Add the fresh berries.
  • Toast the slice of whole-grain bread to your preferred level of crispiness.
  • While the bread is toasting, slice the avocado.
  • Once toasted, place the avocado slices on top of the bread.
  • Drizzle the olive oil over the avocado.
  • Sprinkle a pinch of sea salt (and optional black pepper or chili flakes) over the toast.
  • Serve the Greek yogurt with the avocado toast on the side.
