Instructions
In a skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving a small amount of bacon grease in the pan.
Add spinach to the skillet and sauté for 1-2 minutes until wilted.
In a bowl, whisk the eggs with a pinch of salt and pepper, then pour them into the skillet with the spinach. Stir continuously to scramble the eggs.
Once the eggs are fully cooked, remove from heat.
Serve the scramble on a plate, top with sliced avocado, and crumble the bacon on top.
