Ingredients
  

  • 2 large eggs
  • 2 slices of bacon
  • 1/2 avocado sliced
  • 1/2 cup fresh spinach
  • Salt and pepper to taste

Instructions
 

  • In a skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving a small amount of bacon grease in the pan.
  • Add spinach to the skillet and sauté for 1-2 minutes until wilted.
  • In a bowl, whisk the eggs with a pinch of salt and pepper, then pour them into the skillet with the spinach. Stir continuously to scramble the eggs.
  • Once the eggs are fully cooked, remove from heat.
  • Serve the scramble on a plate, top with sliced avocado, and crumble the bacon on top.
