Greek meatloaf with eggs

Ingredients
  

  • 1 lb 450 g ground beef
  • 1 lb 450 g ground pork
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg for the mixture
  • 3 hard-boiled eggs peeled
  • 2 tbsp olive oil
  • ½ cup tomato sauce

Instructions
 

  • In a large bowl, combine the ground beef, ground pork, onion, garlic, parsley, oregano, cumin, salt, pepper, breadcrumbs, milk, and the raw egg. Mix well until all ingredients are evenly distributed.
  • Place the mixture on a piece of parchment paper or plastic wrap. Flatten it into a rectangular shape, approximately 1 inch thick. Position the hard-boiled eggs in a straight line along the center of the meat mixture.
  • Carefully roll the meat mixture over the eggs, sealing the edges to form a loaf. Press gently to ensure it holds together.
  • Preheat your oven to 375°F (190°C). Transfer the meatloaf to a greased baking dish. Drizzle olive oil on top and cover with tomato sauce. Bake for 1 hour and 10 minutes, occasionally basting with pan juices.
  • Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps retain its shape and juices.
