Rainbow Sandwich Recipe

Ingredients:

  • 4 slices of whole-grain bread
  • 1/2 cup hummus (divided into portions for different colors)
  • 1/4 cup grated carrots
  • 1/4 cup sliced red bell peppers
  • 3 slices tomato
  • 1/4 cup sliced yellow bell peppers
  • 1/4 cup sliced cucumbers
  • 1/4 cup sliced avocados
  • 1/4 cup red cabbage, thinly sliced
  • 1/4 cup baby spinach leaves
  • Salt and pepper to taste

Instructions:

  1. Grate the carrots and thinly slice the red bell peppers, yellow bell peppers, cucumbers, avocados, and red cabbage.
  2. Divide the hummus into three portions.
  3. Add a small amount of grated carrots to one portion of hummus to make it orange.
  4. Add a small amount of blended red bell peppers to another portion of hummus to make it red.
  5. Leave the last portion of hummus plain, or add a small amount of blended spinach for a green color.
  6. Lay out the slices of whole-grain bread on a clean surface.
  7. Spread a thin layer of plain hummus on one side of each slice.
  8. On two slices, layer the vegetables in the order of the rainbow: red bell peppers, orange carrots, yellow bell peppers, tomato, cucumbers, avocados, red cabbage, and baby spinach leaves.
  9. Season with salt and pepper to taste.
  10. Place the remaining slices of bread on top of the vegetable layers, hummus side down.
  11. Cut each sandwich in half, if desired, and serve immediately. Enjoy this Rainbow Sandwich.
