Ingredients:
- 4 slices of whole-grain bread
- 1/2 cup hummus (divided into portions for different colors)
- 1/4 cup grated carrots
- 1/4 cup sliced red bell peppers
- 3 slices tomato
- 1/4 cup sliced yellow bell peppers
- 1/4 cup sliced cucumbers
- 1/4 cup sliced avocados
- 1/4 cup red cabbage, thinly sliced
- 1/4 cup baby spinach leaves
- Salt and pepper to taste
Instructions:
- Grate the carrots and thinly slice the red bell peppers, yellow bell peppers, cucumbers, avocados, and red cabbage.
- Divide the hummus into three portions.
- Add a small amount of grated carrots to one portion of hummus to make it orange.
- Add a small amount of blended red bell peppers to another portion of hummus to make it red.
- Leave the last portion of hummus plain, or add a small amount of blended spinach for a green color.
- Lay out the slices of whole-grain bread on a clean surface.
- Spread a thin layer of plain hummus on one side of each slice.
- On two slices, layer the vegetables in the order of the rainbow: red bell peppers, orange carrots, yellow bell peppers, tomato, cucumbers, avocados, red cabbage, and baby spinach leaves.
- Season with salt and pepper to taste.
- Place the remaining slices of bread on top of the vegetable layers, hummus side down.
- Cut each sandwich in half, if desired, and serve immediately. Enjoy this Rainbow Sandwich.
