  • 2 eggs
  • 1/2 cup milk of choice or water
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon fine-grain sea salt
  • 1/4 teaspoon ground nutmeg
  • Optional: 3/4 cup roughly chopped raw walnuts or pecans

Directions:

  1. Preheat the oven to 325°F (165°C).
  2. Grate the zucchini and gently squeeze out excess moisture.
  3. In a large bowl, whisk together the oil, honey, eggs, milk, and vanilla.
