  • 2 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon lemon juice

How To Make The Mediterranean Vegetable Soup

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots. Cook for 5 minutes, stirring occasionally.
  2. Add garlic, zucchini, and bell pepper. Cook for another 3 minutes.
  3. Stir in diced tomatoes, chickpeas, vegetable broth, oregano, thyme, and cumin. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender
  4. Season with salt and pepper to taste.
  5. Add spinach and cook for an additional 2 minutes until wilted
  6. Remove from heat and stir in fresh basil and lemon juice.
  7. Serve hot, optionally garnished with grated Parmesan cheese and a drizzle of olive oil.
