Instructions:

  1. Activate the yeast: Mix warm milk with sugar and yeast. Let sit for 5–10 minutes until foamy.
  2. Make the dough: Combine flour, salt, spices, and zest. Add the yeast mixture, butter, and egg. Mix and knead for 8–10 minutes until soft and elastic.
  3. Add the fruit: Gently knead in raisins or currants.
  4. First rise: Place in a greased bowl, cover, and let rise for 1–1.5 hours until doubled in size.
  5. Shape the buns: Divide into 12 pieces, roll into balls, and place on a greased baking tray. Let rise again until puffy (about 30–45 minutes).
  6. Pipe the cross: Mix flour and water into a thick paste and pipe a cross onto each bun.
  7. At 375°F (190°C) for 20–25 minutes, or until golden.
