Greek Rice Stuffing Ingredients:

  • 1 cup Arborio or long-grain rice
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup crushed tomatoes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon
  • 2 cups vegetable or chicken broth

Instructions:

  1. Heat olive oil in a pan over medium heat and sauté the onion and garlic until soft.
  2. Add the rice and stir for 2-3 minutes until slightly translucent.
  3. Mix in crushed tomatoes, herbs, salt, pepper, and cinnamon.
  4. Pour in the broth, cover, and simmer until the rice is al dente.

Use this stuffing to fill vegetables or as a side dish.
