Easter Sugar Cookies

Ingredients

  • 2 ¾ cups (345 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup (230 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 4 cups (480 g) powdered sugar, sifted
  • 3 tbsp meringue powder
  • 5–6 tbsp warm water
  • Gel food coloring (pastel colors work best for Easter)

Instructions

  1. Whisk dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  2. Cream butter & sugar: In a large bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
  3. Add wet ingredients: Mix in egg, vanilla, and almond extract.
  4. Combine wet & dry: Gradually add the dry ingredients and mix until a dough forms.
  5. Chill the dough: Divide the dough in half, wrap it in plastic, and chill it for at least 1 hour.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll & cut: Roll the dough to ¼-inch thickness. Cut with Easter-themed cookie cutters (bunnies, eggs, flowers, etc.).
  8. Bake: Bake for 8–10 minutes or until the edges are just starting to turn golden. Cool completely before decorating.

Decorating Tips & Tricks

  1. Use thicker icing to outline each shape, then thin it slightly with water to flood the inside. Use a toothpick to spread it evenly.
  2. Use Piping Bags or Squeeze Bottles: They give more control when decorating fine details like eyes, whiskers, or egg designs.
  3. Use pastel gel food coloring—light pink, baby blue, mint green, pale yellow—for a classic Easter palette.
  4. Add Details After Drying: Let the base layer dry completely (about 1–2 hours) before adding dots, stripes, flowers, or bunny faces
  5. Edible Decorations: Top with sanding sugar, edible pearls, or mini sprinkles for extra charm.
  6. Dry Completely: Let cookies dry at room temperature overnight for stackable, giftable cookies.
